GIANT CUPCAKES – your questions answered
We get lots of questions about making the giant cupcakes using the giant cupcake baking tin.
These tins make you look like a star baker. Childrens parties. Staff members birthday. Anniversary.
Customers have had challenges with uneven baking. The top cooks faster than the bottom.
THIS IS EASILY FIXED!
Resist the temptation to fill up each half of the tin to the top.
The top of the giant cupcake tin requires 2 1/2 cups of cake batter. The bottom requires 3 1/2 cups. This is 6 cups overall which is two packet cake mixes.
If you want to go one step further…..half way through the cooking, turn the tin around.
This video is the best I have seen on the topic of these wonderful tins.

CHOCOLATE CUPCAKES – a little different
There are lots of things I really like about this cupcake baking demonstration.
Firstly the liquid that Stephanie uses for the cupcakes is cocoa mixed with hot water. Easier than melting chocolate yet still with a good chocolate flavour.
Secondly she is using the wonderful Paper Eskimo baking cups. You get to see how great they look when they come out of the oven. Just as bright and colourful as they went in.
The chocolate cupcakes look terrific in these baking cups. We love these and now have about 10 different colours in this range.
It’s a long video, but fast forward using the bar at the bottom. Move it a long a bit.
Does she really have two big power mixers? One white and one black?

Cinnamon Roll Ups
I got this from a lovely blog called Circle B Kitchen. She takes great photos which always makes a blog interesting.
I tried these….FABULOUS!
Cut the crusts of white bread (although fruit bread would be interedting). Roll flat and either brush with melted butter on both sides or butter like a sandwich. Melted butter works better.
Sprinkle with a mix of cinnamon and caster sugar.
Roll up, like so, but any method of rolling up works.
Put into mini muffin tins, normal sized tins are too big. I brushed the inside of the tin with the melted butter I was using to brush the bread.
Sprinkle with a little more cinnamon/sugar and bake at 200 degrees for about 15 – 20 minutes.
The outside gets crispy and the inside a bit soft and gooey and they are lovely.

Simple & Wonderful – Baked Goats Cheese Recipe
It has been on lots of restaurant menus recently.
Baked goats cheese.
I had it at Pitchfork at Peregian Beach last week.
They serve it in a little ramekin, with fried fingers of toast on the side.
Here is the most simple recipe in the world. You will look like a Masterchef.
Take the log of cheese from it’s wrapper and roll in chopped walnuts.

Put it one of these and drizzle about 2 tablespoons of honey over the cheese.
Bake for about 15minutes at 200degrees.
The goats cheese will melt a little, which is why the ramekin comes in handy. Take it out of the oven,lift the lid and serve with baguette.
As a variation, figs, a dollop of goats cheese in each, sprinkle with walnuts and drizzle with honey. Two into the ramekin and bake the same way. Ten minutes with lid on, then 5 minutes with the lid off.
Perfect if you feel like something light but warm.

Easter Marshmallow Bunnies

Marshmallow bunnies have been an Easter tradition in our store. We have sold them for years. I made them last year and again yesterday and love how much fun and how delicious home made marshmallow is.

We have had Easter goodies in the store for a few weeks now.
